Smoked Gouda, Bacon, & Mushroom Dip

We love this dip and can’t take credit for the recipe. Someone shared it with us years ago, and we’ve been making it ever since. It’s one of those dishes that quickly becomes a staple once you try it.

It’s rich, savoury, and comforting, and it tends to make an appearance whenever we’re hosting friends, visiting family, or just craving something cozy and easy. Simple to make and always a crowd favourite, it’s the kind of recipe people ask for after the first bite.

Ingredients

  • 1 package cream cheese, softened

  • 1/2 cup mayonnaise

  • 1 cup smoked gouda, shredded, plus more for topping

  • 6 to 8 slices bacon, cooked and finely chopped

  • 1 1/2 cups mushrooms, finely chopped

Instructions

Preheat oven to 375°F.

  1. Sauté the chopped mushrooms in a pan over medium heat until fully cooked and all moisture has evaporated. Set aside to cool slightly.
  2. In a bowl, mix the cream cheese and mayonnaise until smooth. Stir in the smoked gouda, bacon, and sautéed mushrooms.
  3. Spread the mixture into a baking dish and top with a little extra smoked gouda.
  4. Bake for 20 to 25 minutes, until hot and bubbly. Broil briefly if desired for a lightly golden top.
  5. Serve warm with crackers, crostini, naan, or sliced baguette.

This dip is smoky, creamy, and deeply savoury, with the bacon and mushrooms balancing the richness of the cheese. It’s simple, comforting, and always disappears fast.
